[http://wiki.openstreetmap.org/wiki/Tag:historic%3Dcastle historic=castle] isn't rendered by Mapnik e.g. [http://www.openstreetmap.org/?lat=55.60811&lon=-3.06418&zoom=17&layers=B000FTF here].
It appears that building=castle is rendered, but it may be the case that this is simply treated the same as building=yes?

It is possible to use tourism=attraction combined with name and building=*.
I would propose that we don't render this tag, as rendering too many different tags will only cause a visual mess of which users don't understand the meaning. I will therefore close this issue. If someone disagrees, feel free to re-open this on the new CartoCSS issue tracker: https://github.com/gravitystorm/openstreetmap-carto
