After a couple of hours of racking my brain trying to figure out why JST templates weren't compiling, I find out it's because the asset paths shouldn't have a leading slash. The README has the :asset_paths => ['/app/assets/javascripts'] but instead it should be:

guard 'sprockets', :destination => "public/javascripts", :asset_paths => ['app/assets/javascripts'] do
  watch (%r{app/assets/javascripts/application.js})
