CLI: `--help` not working on Windows 10/11

On windows you need to suffix the command with 2>&1 | Out-String to see the output

These commands both display correctly in Windows Terminal (PowerShell) :

processing cli --help | more

processing cli --help 2>&1 | Out-String

This command displays correctly in Windows Terminal (Command Prompt) :

processing cli --help | more

I’ve done a lot of command-line work in my day, and it’s coming back to me!
There are more ways to do this, but I’ve tempered my enthusiasm with a bit of restraint.

Yes it was resolved by the documentation update in processing/processing-website#654
