  1. (maint) fix pathing issues 

    - params.pp cannot use environment variables.
- In chocolatey.rb the final selection is not using a double backslash,
so it was actually escaping the c - getting to that selection usually
never happens, but we need to fix it to work appropriately.

  2. (doc) fix pass options with spaces and quotes 

    Passing quotes through to a native installer is hard enough, one may
need to do additional work to ensure that Chocolatey receives those
quotes appropriately.
