Why is the `Insert Cell` shortcut different between Source and Visual Mode

One quirk with Quarto is that Insert Cell's shortcut is different between Source and Visual Mode.

On my Mac:

• Source: Cmd + Shift + I (intuitive to me)
• Visual: Cmd + Option + I and it inserts Python only?? (makes no sense to me)

I think we need to align these on Cmd + Shift + I and make Visual Mode use the same kind of logic as Source Mode where it auto inserts whatever cell language you used before this one.
