This allows me to add ssl_allow_poodle_attack to the rabbit section of the config file (required with a too-old erlang).

How about having new attribute like node['rabbitmq']['additional_rabbit_configs'] for rabbit application? node['rabbitmq']['conf'] could be used to configure other applications/plugins.
