i had trouble getting a MS Outlook Client to display utf-8 properly. The only way to support special characters was to send all the stuff with iso-8859-1. But hey, all the rails app stuff is utf-8 encoded (DB, Templates, Files...)
So i decided to add an 'arguments_charset' to actionmailer to tell actionmailer to recode the input with iconv if the 'charset' definition differs from the 'arguments_charset' definition.
With this one can write
config.action_mailer.default_charset = 'ISO-8859-1'
config.action_mailer.default_arguments_charset = 'UTF-8'
within environment.rb to send all email as 'ISO-8859-1'
Attached a patch. No tests included - but it works for me now and MS Outlook users will see üäö :)
