Space between columns

I am interested in a setting, so that all gt tables are created with more space between the columns. They are all scrunged together.

One way to fix it is to set the column widths explicitly. But this doesn't work as a general solution.

Definitely agree! Working on this now in an in-progress PR that makes it easy to set the horizontal (and vertical) padding of cells.
