My results:

Safari 5.0.6 (PPC OSX 10.5.8) - Pinstripes (less distinct than r159, white maybe 1px vs 2px in prior release?).

If you are going to change UI look and feel, can you at least provide an "old" theme that enables
compatibility? That would eliminate the need for a look and feel fork.

Made the following change to apple.css:

/* line 13, ../scss/apple.scss */
#jqt > * {
  background-color: #cbd2d8;
  background-image: -webkit-repeating-linear-gradient(left, transparent, transparent 2px, #c5cdd4 1px, #c5cdd4 7px);
  background-image: repeating-linear-gradient(left, transparent, transparent 2px, #c5cdd4 1px, #c5cdd4 7px);
}

Safari 5.0.6 (PPC OSX 10.5.8) - Pinstripes more visible, consistent with r159.

Safari 5.1.1 (Intel OSX 10.6.8) - Pinstripes visible
iOS Simulator 4.2 - No pinstripes
iOS 4.2.1 - No pinstripes

What versions are you using?

Also, in PPC MacOS Safari, the pinstripe background mutates if I change the window size past about 970 pixels.

This is probably due to overlapping intervals in the gradient calculation. Result is fairly ugly.
Good news is the problem is not present in Intel Safari version.
