It seems to work correctly on OS X, so I'll test on Windows.

Confirming I have seen the same behavior on Win7/X64. Happens both in the print settings tab, and in the part settings window.

I think I'm not actually understanding what the problem is. Can you provide detailed steps to reproduce the issue?

On the infill tab, when you click on the drop down arrow, then select a different infill, it flashes briefly with the setting you selected, then disappears. If you then save it, the new value you selected is saved and appears. It seems to be some sort of odd graphics bug, not a bug in the software itself.

Of note, if you manually type in a value this issue does not appear. This appears to be an issue with the % sign on the selection choices or something related to them? not sure what is coded for them. if you place the cursor in the empty box and press the up arrow key repeatedly, the selected choice appears to flash briefly.
If you select a value and save it to make it appear it shows up as just the number. But if you click on the drop down arrow, it changes to the number with the % symbol and remains until you select another choice. Saving it while it is showing the % symbol causes it to disappear.

Perhaps if you remove the % symbols from the choices it will resolve itself? Is this related to the Repetier Host problem where it cannot read the infill density value when you click the Copy print settings to Override button?
I tried using a custom value (33) to test if the % symbol was the root of this, but Rep Host was still unable to retrieve the infill value and defaulted to zero.

Same problem here. Slic3r 1.2.2-dev (Windows 7 64-bit)
Print settings > Infill > Fill density: dropdown
Select an item and the field becomes blank. Typing the numbers directly works but a drop down is heaps better.
