Bumps to the latest patch release of Go (1.26.2) and golangci-lint to its latest for compatibility (v2.11.4)
Motivated by CI failing per the controller-runtime/setup-envtest utility:
Note: I've left the go versions in the sample apps directory at 1.25.3 for compatibility with the current tinygo version; tinygo 0.41.0 is still pending.
