I found the following example of how to configure OpenID attribute in an issue comment. It should be added to the manual.
<openid-attribute name="email" type="http://schema.openid.net/contact/email" required="true" count="2"/>
<openid-attribute name="name" type="http://schema.openid.net/namePerson/friendly" />

Actually, I just tried this out and it does not work. Spring complains that is an unexpected element. (And the Eclipse XML validator was saying the same thing.)

It is used in the OpenID sample and works there without problems. Chances are you have the wrong schema or are using the wrong jars. I'd suggest you use the sample as a starting point.
Sorry Luke. I made a stupid mistake when adding the element.
However, in looking at the sample XML, I noticed that it is still using the 2.0 xsd for the spring-beans schema. It's harmless, but you might want to do a trawl across all of the samples ...
Added extra section to namespace chapter on attribute exchange.
