Update supported databases

This is related to all these PRs (it was easier than doing separate docs):

strapi/strapi#18499
strapi/strapi#18500
strapi/strapi#18503

The only thing remaining is if I may have missed somewhere that we list what database versions we support, because we no longer support MySQL v5 but I couldn't find it except in the contrib docs in the monorepo.

We indeed mention supported database versions elsewhere: in the CLI installation instructions at https://docs.strapi.io/dev-docs/installation/cli.

We also mention databases in the Project Creation guide for Strapi Cloud : https://docs.strapi.io/cloud/getting-started/deployment, though we're not targeting any specific version here.
It might also be worth having a look at the advanced database configuration guide for Cloud, in case something needs to be updated: https://docs.strapi.io/cloud/advanced/database
