How can i use Auth0 with vercel serverless

You don't need to use Next.js, but it will be an easier experience since you can handle both your frontend and backend in the same project.

Of course, you can still use the normal React SDK too: https://auth0.com/docs/libraries/auth0-react

If you want to use serverless, then yes I would recommend using Next.js for the backend with their SDK. Otherwise, you can deploy a Node.js server to any serverful hosting provider (e.g. Railway, Heroku, AWS).
