fix: upgrade rollup and typescript

Description

ecosystem-ci is failing when we upgrade rollup to latest, as the sourcemap types are incompatible. This should fix it.

Upgrading typescript isn't exactly needed, but I figured to upgrade doesn't ignored by renovate altogether.

I also updated renovate to remove unused deps from the Vite repo.
