Description of your issue, suggested solution and other information

I can't download video and subtitles and then mux into a MKV file. I've tried many combinations but they didn't work.

My command line:
youtube-dl -i --prefer-ffmpeg --no-overwrites --download-archive motivacionais.txt --no-post-overwrites -f best --merge-output-format mkv --all-subs --convert-subtitles srt --embed-subs --config-location D:/AUTO/gabyoutubevideos.conf "https://www.youtube.com/channel/UC8PICQUP0a_HsrA9S4IIgWw/"

All I get is a MP4 file. Youtube-dl downloads the subs and then remove them.

Muxing is merging audio-only and video-only medias into single file by definition. You are requesting best format that is single file media with audio and video, --merge-output-format does not apply in this case. If that really what you want then you should use --recode-video mkv. If not, you should request audio-only and video-only formats providing --merge-output-format.
