When I downloading videos from YT, saved file is only audio.

plays fine with both VLC and MPV, most likely a problem with the video player you're using.

I using build in windows player and iTunes

as I said the video is playable with VLC and MPV.
Windows Media Player and iTunes do not support a lot of new codecs used by websites(in this case the av1 video codec is not supported by both).

So, how I can convert downloaded vidios for iTunes?

you can download the video one of the supported codecs by iTunes(avc1) or convert the video with whatever tool you prefer(Handbrake, FFmpeg...).
anyway, the problem has nothing to do with youtube-dl.
