Exemple :

$element = new SelectElement('foo');
$options = array(
    array(
        'label' => 'This is the label',
        'value' => 'value',
        'attributes' => array(
            'class' => 'test-class'
        ),
    ),
);
$element->setValueOptions($options);

"Zend\Form\View\Helper\FormMultiCheckbox" already supports "attributes" option spec
