Split up ECH integration tests into dedicated package

The ECH-specific e2e tests are currently included in the shared testing/integration folder. To improve separation of concerns, we should extract them into a dedicated testing/integration/ech package.

Doing so will enable better modularisation, reduce noise in the general integration package, and support isolated CI execution or local development for ECH-related functionality.
