..there don't appear to be any, and yet the installation docs ( http://www.mathjax.org/resources/docs/?installation.html ) suggest I select one for a stable version.

How should I get a "stable" version?

Sorry. As you note, we haven't yet tagged a stable milestone release in GitHub yet. The last official release was 1.01, and you can get it from

http://sourceforge.net/projects/mathjax/files/MathJax/

We are still planning out putting out a new release out of GitHub by the end of the year, and will likely need to update the docs a bit in light of how that release engineering goes.

I should add that the master branch in GitHub should also be quite stable, and you should be okay using that for your own development.

There is now a v1.1-beta tag, so git tags -l should reveal that. When we release the official v1.1, the tag for that will become available as well.
