Add eGoldchain Mainnet and Testnet

This PR adds the configuration for:

• eGoldchain Mainnet (chainId: 1187)
• eGoldchain Testnet (chainId: 21187)

Both configurations follow the EIP-155 standard and include block explorer, RPC URLs, and native currency info.

The RPC is active at https://rpc.egoldchain.com.
