Documentation Overhaul

This task will deliver complete documentation updates including tutorials, example configurations, and contribution guidelines. It will also align the package with JuliaHealth documentation standards.
Success when:
README includes setup instructions, example config, and training run.
Separate documentation site or folder includes tutorials and theory.
Docs are contributed to the JuliaHealth website as well.
