Delete All Files But Exclude

During the Deployment Project to Hosting process, sometimes there are some files whose names have changed or have been deleted. This happens quite a lot, I want when Deploying all the files are deleted first to match the ones being sent. But can I exclude files like .env? For how? Thank you
