Update compatibility info

Added information about the version number of SimpleMenu for which the latest release of SimUI is optimised and removed info about the ability to use the 320x240 theme on a 640x480 device (no longer possible with SimpleMenu 10.1 or newer).

Add v1.1 screenshots and update hyperlinks
