Reflect update of msys2 wildcard support for the GCC compiler

Some time ago, wildcard expansion was disabled in all of msys2's packages.
This was already discussed, and a PR was made to update the suggestion in the docs.

After some internal discussion, it was decided to enable wildcard expansion for the GCC package through this PR.
msys2/MINGW-packages#23517

It might be a good idea to update your docs to reflect this change, again.
