Enable stub_status module

Is it possible to enable to the stub_status module in Nginx so that we can monitor the status from an external tool?

The module is already built with openresty. There's nothing stopping you from adding the status to any one of your existing proxy hosts, by putting this in the Advanced tab:

location /nginx_status {
  stub_status;
}

and hitting that path on the host.
