Docs: Add missing source payloads in Kafka docs

What were you searching in the docs?

While looking at the code samples in the Kafka consumer page, the source payloads and schemas are missing for most examples.

Is this related to an existing documentation section?

How can we improve?

We should add a section that shows these sample payloads and schemas for each code example, to make it easier for users to understand and reproduce the examples.

Got a suggestion in mind?

Add a dedicated section or inline code blocks for the source payloads and schemas referenced in the Kafka consumer documentation examples.
