[Documentation] "Upcoming Release Roadmap" is outdated

Describe the documentation issue

The Roadmap is quite outdated. Still mentioning 1.20.1 as in-progress, while 1.22 is already released.

Also it would be nice to see more of a roadmap. Not just the next upcoming release, but some longer term plans.
