Use fluentbit+elasticsearch as the logging solution

That combination seems the easiest to implement on bare metal.
Also it's great to use CNCF projects like fluent{d,bit}

Could probably use the elasticsearch and fluent-bit helm packages as the base: https://github.com/kubernetes/charts/tree/master/incubator/elasticsearch and helm/charts#895

I created a fluent-bit example at giantswarm/kubernetes-elastic-stack. Just to let you know. Of course helm packages would be cool, will give them a try :)
