I have gone through the documentation of your EFI and I show that you have disabled NVME drive. I have working and stable hackintosh but sometimes there are kernel panics due to unsupported nvme controller of samsung ssd. So please guide me to disable that nvme drive for hackintosh and I am using Sata ssd for hackintosh.

@irfan-vora try this https://dortania.github.io/OpenCore-Install-Guide/extras/spoof.html#windows-gpu-selection , and look at the device properties method. Though the guide is about disabling GPU, you can do the same for your Nvme, just get the PCIE path and add it to property file as shown in the guide.
