Inconsistent default spatial plots

Why does the plot look different if the data is interpolated onto a structured grid?

• Colorbar placement
• Colorbar decimals
• Datetime in title
• Aspect ratio?

...
The plot can be quite nice, with a combination of interpolation and a outline of the domain. (miss the option to customize the style of the outline though).

For structured grids it is also possible to rely on xarray.
