deleted log file is not recreated, erasing lines from log file stops logging

Hi,
if the following behavior is intentional then it is not a bug report but a feature request)

Steps to reproduce

Delete mountebank log file or change log file content (delete lines) while mountebank is running

Expected behaviour

Log file is recreated, logs are written to the log file.

Actual behaviour

Log file is not recreated, logs are not written to the log file anymore.

Software versions used

OS         : Windows 10x64
mountebank : 2.6.0
node.js    : 14.17.3
  (only if installed via npm)
Installation method : npm
  (npm, zip, tar, pkg, deb, rpm)

Also It would be very handy to have separate log file per imposter
