RELEASE: cut new docker image for libgourou v0.8 #7

libgourou and libgourou utils have been updated to 0.8. Sadly, I missed the 0.7.3 release, which we will skip.

Quick pass through on the commits since 0.7.2:

completed OpenSSL3 migration
cleaned up logging library (also, additional debug / errors for improved clarity)
improved handling for invalid / malformed encryption keys (DRM_INVALID_KEY_SIZE, DRM_ERR_ENCRYPTION_KEY_FP) See Issue #38
launcher utility application (+ AppImage, not relevant for this docker container)
various under-the-hood code improvements. Several new functions to help in debugging

TODO: Tag a new release and update dockerhub.
