I downloaded and installed Swype beta (since installing cyanogen resulted in me losing swype).
I set swype as my default keyboard but every time I restart the tablet it reverts back to the android keyboard.

Works for me just fine with Hacker's keyboard. Are you sure it is not a problem with Swype?

I have managed to reproduce the problem with hacker's keyboard.
I'm using Launcher Pro and every time it boots up it crashes and I have to do a force close. Could this have something to do with it? Not only is the default keyboard unset but for some reason all but the bundled keyboard are also unselected in the Language & keyboard settings.

I just check it with ADW Launcher and the behaviour is the same. FYI I've tried it with Swype and Hacker's Keyboard.

It must be something about your Tab since it works for many others. Try selectively wiping keyboard and other settings data in Titanium Backup, maybe it is somehow corrupted? See if there are any relevant messages in logcat. And in the end try full wipe. Launcher FC could be causd by many things, and you should see in logcat where it crashed and what is the call stack.
