scalar_image_function_inspector.py needs a refactor

Although this example does demo some cool functionality, the code itself does some very strange, non-standard things that we likely don't want to be using in an example people will take inspiration from.

This code should be refactored to follow best practices. Eg. not over-loading "view" and "model view" to be different from the View and ModelView of traitsUI.
