[IDEA]: Consider removing the latest and next tag from docker image #131

The Idea

As latest and next will eventually introduce breaking changes to the clients, this should be removed and only specific versions should be used.

Open for feedback.

+1 on this, whilst latest is useful when basing from ubuntu images for example (FROM ubuntu:latest), those types of images wont reallt incur breaking changes like a deno module could introduce

In that case, i think using latest for nessie (whilst beneficial because people dont have to update the version number), encourages people to use it and even possible use it in production
