config sample folder needs clearer purpose

within doc folder there is a subfolder config_examples, only a few files are used in rst as part of .. literalinclude:: most of the files are also available in datacube-dataset-config repo https://github.com/opendatacube/datacube-dataset-config/tree/main/config_samples

only one set of config_sample should exist, can keep the ones used in literal_include and remove the others
