[Proposal] Switch on optional indexing options by default

By default, most of Weaviate's configurable indexing options are switched off, like:

• indexNullState
• indexTimestamps
• indexPropertyLength

This causes users to assume it's not working, or the feature is not enabled.

What if we switched them on by default, and allowed in-prod, or advanced users to switch them off if desired?

This would help users get a more favourable impression of Weaviate's feature set.
