lua-lsp is not currently maintained, there is luals which can be used as an alternative

Add luals & installation instructions to LanguageServers.md
Add default configuration for luals to config.lua
Check that all commands work as expected (or at least as well as with lua-lsp)
- hover
- format
- autocomplete
- goto-definition
Change the default language server for Lua in config.lua
