I was not able to reproduce this on a test site, but I ran into the same issue on two different user sites using two different themes today, so wanted to be sure to report it.
In both cases, the user reached out because the gallery was displaying as one left-aligned column instead of multiple columns. One user had theirs set to 3 columns, the other to 2.
In both cases, the galleries had markup in the HTML indicating they had been center aligned. If I un-selected the center alignment in the editor, and re-selected it again, this resolved the issue in both cases. Unfortunately since I can't replicate the problem I wasn't able to determine if this is Calypso-specific or a Gutenberg issue.
