Add test for endpoints

We should add a test script for querying api endpoints.

Since we are generating an open-api doc, we can do something like chai openapi response validator to assert that endpoint responses match the open-api doc.

Is this what you mean when you say "test for endpoints?"

There's something that could be even better since I'm setting up stoplight studio for our api documentation. This service provides request validation and a validation proxy that will test against our openapi description.
