Describe the bug
Editing and Saving your own project will result in your user email being overwritten with redacted

To Reproduce
Steps to reproduce the behavior:

  1. Create a project
  2. Edit the same project
  3. Save the edit project form
  4. Request /api/user endpoint to view your email

Expected behavior
Redacted not being saved in db, ever.

Additional context
We need to be sure that this does not happen in other endpoints as well
