#405 already reworked how user stats are displayed for the info command. The next step would be to make similar improvements to the server-wide stats. This includes both the presentation of the output (not an ASCII table) and which stats are displayed (we need MORE).

In particular, it would be interesting to get stats about the number of new volunteers in the last week or two, the number of recently active volunteers, the number of new transcriptions, etc. as well as check-related stats.
