[Feature Request] Configure mail settings via ipconfig.php

Hey,
it would be cool to configure mail settings also via ipconfig.php, for example by setting:

$MAIL_GATEWAY = "sendmail";
$MAIL_GATEWAY = "smtp";
$MAIL_GATEWAY = "phpmail";

Or something like this. This is cool to automatically configure it for systems like NixOS where I could configure Invoiceplane with the extraConfig option https://nixos.wiki/wiki/Invoiceplane
