Based on Scotch/Box, based on Xenial (Ubuntu 16.04), both no longer supported #69

DairyBox is based on a VM Scotch/Box, which is no longer supported or developed.

Scotch/Box is based on Ubuntu 16.04, whose "5 year support" period ended last year.

The solution here would be find if someone else picked-up the reigns, creating a Scotch/Box like Vagrant box based on a more recent Ubuntu, or to create our own.

At some point we will need to create our own (and I have, but I've run into problems maintaining Vagrant boxes), but in the short term switching to a different 3rd party alternative could get the job done.

I've found one alternative so far.

https://github.com/reddingwebpro/cognacbox

Downside: Ubuntu 18.04 (EOL in April).

Also some of the issues posted by the original author (broken passwords?) seem odd.

I'm not having much luck finding any other alternatives.

I have been messing with this. I'll see if I can get it working with this repo.

And now that you've reminded me, I'm going to open a new issue to keep some notes. I'm rebuilding the servers, and I should really write down what we're going to want in a new VM.
