"

Serves 2

Ingredients

1 tablespoon extra virgin olive oil

1/2 pound boneless chicken breasts, roughly cubed

salt and pepper, to taste

1/4 teaspoon garlic powder

1 large clove of garlic, minced

1/3 cup diced white onions

1 14oz can diced tomatoes (or crushed tomatoes) with juices
1-1.5 tablespoon chopped basil

2 medium zucchinis, Blade C, noodles trimmed

Instructions

Place a pot/saucepan over medium heat and add in the olive oil. Once the oil heats,
add in the chicken. Season with salt, pepper and garlic powder. Cook for 3 minutes and
then flip over, cooking another 3-5 minutes or until chicken is cooked through and no
longer pink on the inside.

Then, add in the garlic and onions and cook for 2-3 minutes or until onions start to
soften and become translucent. Then, add in the canned tomatoes and roughly crush the
tomatoes with a potato masher or the back of a fork. Bring to a boil and then reduce heat
and simmer. Season with salt and pepper and let cook for 5 minutes, add in the basil and
cook for another 5-10 minutes or until most of the liquid has evaporated and it is thicker,
suitable for cooking with zucchini noodles. Add in the zucchini noodles and toss for
2-3 minutes or until noodles are al dente.

Divide into bowls.

"
,
"

Serves 3-4

Ingredients

For the noodles:

1 medium butternut squash, peeled

½ tablespoon extra virgin olive oil

¼ teaspoon garlic powder

salt and pepper, to taste

For the rest:

½ cup roughly chopped walnuts

1 cup of brussels sprouts

2 tablespoons extra virgin olive oil

1 medium red onion, sliced thinly

1 large garlic clove, minced

¼ teaspoon red pepper flakes

salt and pepper, to taste

optional: ¼ cup grated parmesan cheese

Instructions

1.Preheat the oven to 400 degrees. Spread the butternut squash noodles out
on a baking sheet, drizzle with olive oil and season with garlic powder, salt and pepper.
Line another baking tray with parchment paper and place the walnuts. Bake the butternut
squash noodles alongside the walnuts, baking the walnuts for just 5 minutes and baking the
noodles for 8-10 minutes or until al dente, tossing halfway through.

2.While the butternut squash is baking, shred the brussels sprouts. Chop the bottoms off
and peel off the outer leaves, if tough and discolored. Slice them in half and then slice
thinly lengthwise. Set aside.

Place a large skillet over medium heat and add in the olive oil. Once oil is shimmering,
add in the garlic, red pepper flakes and onion and lower heat to medium-low and cook the onion,
stirring occasionally, until onion is translucent and mainly wilted, about 3 minutes.
Add in the brussels sprouts and season with salt and pepper. Cover and cook the brussels sprouts,
still on medium low heat, uncovering occasionally to stir, or until lightly browned and cooked
(about 3-5 minutes). Take the skillet off the heat and add the parmesan (if adding) and then fold
in the walnuts, stir, and pour into a large mixing bowl along with the butternut squash noodles.
Toss to combine and serve.

2 teaspoons chili sauce or sriracha

3 medium daikon radishes, peeled, Blade C, noodles trimmed

½ cup cilantro leaves

Instructions

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

Place all of the ingredients for the meatballs into a large bowl and mix together. Form 10-12 golf ball sized meatballs with hands and place on the parchment paper. Bake until cooked through, about 18 minutes.

Once you place the meatballs in the oven to bake, place a large saucepan over medium heat and add in the sesame oil. Once oil heats, add in the ginger, cooking for 30 seconds or until fragrant. Add in the broccolini, season with pepper and cook for 3-5 minutes or until it turns bright green. Add in the chicken broth, water, soy sauce, fish sauce and chili sauce. Cover and bring to a boil and then uncover, lower heat and simmer for 10 minutes until broccolini is crisp-tender. Then, add in the daikon noodles and cook for 3-5 minutes or until noodles are to your preference (if you like al dente, no more than 3 minutes, if you like
softer, go up to 5 minutes.)

Portion the soup into bowls, top with 3 golf ball sized meatballs. Garnish with cilantro and serve immediately.

Ingredients

1 tbsp olive oil

3 slices prosciutto, fat removed, chopped

1 medium onion, chopped

2 garlic cloves, finely chopped

2 sage sprigs

2 rosemary sprigs

4 skinless chicken breasts (550g total weight), preferably organic

150ml dry white wine

400g can plum tomatoes in natural juice

1 tbsp tomato purée

225g chestnut mushrooms, quartered or halved if large

small handful chopped flat-leaf parsley, to serve

Instructions

1.Heat the oil in a large non-stick frying pan. Tip in the prosciutto and fry for about 2 mins until crisp. Remove with a slotted spoon, letting any fat drain back into the pan, and set aside. Put the onion, garlic and herbs in the pan and fry for 3-4 mins.

2.Spread the onion out in the pan, then lay the chicken breasts on top. Season with pepper and fry for 5 mins over a medium heat, turning the chicken once, until starting to brown on both sides and the onion is caramelising on the bottom of the pan. Remove the chicken and set aside on a plate. Raise the heat, give it a quick stir and, when sizzling, pour in the wine and let it bubble for 2 mins to reduce slightly.

3.Lower the heat to medium, return the prosciutto to the pan, then stir in the tomatoes (breaking them up with your spoon), tomato purée and mushrooms. Spoon 4 tbsp of water into the empty tomato can, swirl it around, then pour it into the pan. Cover and simmer for 15-20 mins or until the sauce has thickened and reduced slightly, then return the chicken to the pan and cook, uncovered, for about 15 mins or until the chicken is cooked through. Season and scatter over the parsley to serve.

Ingredients

6 skinless chicken breasts

2 tbsp olive oil

1⁄2 tbsp balsamic vinegar

140g bag rocket

25g Parmesan

lemon wedges

For the marinade

2 garlic cloves

3 rosemary sprigs, leaves finely chopped

6 sage leaves, finely shredded

zest 1 lemon and juice of ½

3 tbsp olive oil

Instructions

1.Place each chicken breast between 2 sheets of cling film or baking parchment. Use a meat mallet or rolling pin to bash each piece of chicken – flatten out to an even layer about 0.5cm thick. Transfer to a dish.

2.To make the marinade, crush the garlic with a good pinch of salt using a pestle and mortar. Add the rosemary and sage, and give everything a good pounding. Stir through the lemon zest and juice, olive oil and some ground black pepper. Pour the marinade over the chicken, ensuring that it’s well coated. Cover and chill for at least 2 hrs.

3.Heat the barbecue. Once the flames have died down, spread the coals out to an even layer. Cook the chicken for 1-2 mins each side. Transfer to a board and leave to rest for a few mins.

4.Meanwhile, pour the oil and balsamic vinegar into a large bowl. Add the rocket and some seasoning. Toss together, then shave over the Parmesan. Serve the salad with the chicken, with lemon wedges to squeeze over.

Ingredients

3/4 cup cubed chicken breast

2-3 tbsp favorite teriyaki sauce (I use Annie Chun's)

1 ear of corn

1 large garlic clove, minced

1 pinch red pepper flakes

2 bunches of baby bok choy, bottom tough stems remove

1 tsp low-sodium soy sauce

1/2 cup chicken broth

2 medium zucchinis, Blade C

Instructions

Preheat the oven to 375 degrees. Place your chicken on a baking tray and pour over with teriyaki sauce. Mix together so that the chicken is covered. Let marinade while oven preheats. Once oven preheats, bake for 15-17 minutes or until chicken is cooked through.

While the chicken is marinading, cover your corn with water in a medium saucepan. Lightly salt the water and cover, bringing to a boil. Cook for another 2 minutes once boiled and then set aside to strain in a colander.

Place a large skillet over medium heat and coat with cooking spray. Once the skillet warms, add in the garlic and red pepper flakes. Let cook for 30 seconds and then add in the bok choy. Toss to combine and let cook for about 2 minutes or until bok choy begins to wilt. Then, shave off the kernels of the corn with a knife into the skillet. Then, add in the soy sauce and chicken broth.

Let reduce for about 3-5 minutes or until most of the liquid is gone. Then, add in the zucchini noodles. Toss to combine and let cook for 2-3 minutes, tossing frequently, or until noodles have softened to your preference. Remove from heat, place in the cooked chicken, toss to combine and then divide into bowls. Enjoy!
