Make NchanTOT, n_chan_bin required settings

These don't get overwritten by the probe file, so the default (which is for neuropixels) gets used if these aren't set explicitly. Should require these to be specified every time to avoid confusion.
Also need to remove one of them eventually, they are redundant.
