after going through (https://docs.ohif.org/I-want-to/add-a-logo-to-the-viewer.html) this I came to know brand name and logo can be changed
Viewers/OHIFViewer/client/components/ohifViewer/ohifViewer.html

  1. Is there any way to change the name after generating bundle?

If the SVG is external, you could substitute the file at that location? If you need something more dynamic, please feel free to suggest alternative implementations.
