Update Stella to use gender-dependent titles

Currently, Stella has the title master hardcoded into her dialogue in 29 places^[1]. Other files (41 total^[2]) use [pc.master] and [pc.Master] instead, to substitute in mistress (with appropriate capitalisation) for female and female-identifying characters.
