Any thoughts on a recommended GPU.

Not gaming, just want something that works with macOS via VNC or RealVNC.

Use a supported AMD dGPU for the fully supported experience. This is also covered in the guide, and if not, is well documented by Dortania and elsewhere. Nvidia doesn't provide full metal support which is necessary for the, "as close to native as possible experience".
